Laurent Dassault, President of Dassault Wine Estates, signed 6 July 2016 purchase of the grand cru Château Saint Emilion Trimoulet the John family.

This property of 17 hectares, bordering the Château Dassault, purchased in 1955, reinforces the presence of the Dassault family in Saint Emilion after the acquisition of Château La Fleur 2002 and Château Faurie de Souchard in 2013.

Dassault Wine Estates now covers a larger area of the appellation Saint Emilion Grand Cru with over 60 hectares of vines planted on the north hillside of Saint Emilion.

Wine pole of the Dassault Group, consolidated in Dassault Wine Estates, also has a stake in Château Cheval Blanc, alongside Family Groups Brothers and Arnaud, and Château Rieussec Château and the Gospel alongside Domains Barons de Rothschild.

A short time of 60 years of Château Dassault, Dassault family brand and its commitment to the prestigious Saint Emilion.

A harvest period always leads to a stressful moment… Sometimes this worrying period starts as early as spring, sometimes later… In the best case, at the last moment… with the choice of the harvesting date!

2015 vintage, no stress…

The weather was favourable for the development of the vines, from start to finish. The vine was generous in terms of fruit quality and the weather gave us the opportunity to take our time and make the most of the harvesting period.
The grapes were sweet, the pips were crunchy with the taste of hazelnuts, even the thick skins had a good texture.

Yesterday, last day of picking

Our first tanks, which were filled on 28 September, are just finishing their alcoholic fermentation, others are still under way, and the last tanks are entering the cold soaking stage…

Our first tanks, which were filled on 28 September, are just finishing their alcoholic fermentation, others are still under way, and the last tanks are entering the cold soaking stage.

The musts, flavourful and already complex, are starting to show their colours and the tannins are starting to emerge gently for the first tanks. There is good acidity, giving the freshness necessary behind the excessive sweetness of the fruit.

The fruit aromas are extraordinary, even when we have barely entered the fermenting rooms.

The puzzle of 2015 is starting to fall in place, allowing us to imagine the future profile of this vintage.

Nature having performed wonders this year, we need to respect it and make sure that each plot expresses its terroir. The fruit must guide us, and we must respect the balance between its aromas, its sweetness, its acidity and its tannins.
